Carrageenan is a natural product and produced out of red seaweed from the Eucheuma Cottoni species, that grows in warm waters and produces Kappa and lota Carrageenans while the species that grows in cold waters produces Lambda Carrageenan. Carrageenan is obtain through a process of extraction with water or mild alkali.

Carrageenan comes in powder form and is used in industries as water- binding, thickening, stabilizing, emulsifying, suspending and/or gelling agent in various food as well as non-food applications.


Sodium Erythorbate


Applications:

Sodium Erythorbate is a white crystalline powder that finds its application in two general areas in the food industry. First, it functions as antioxidant in a variety of foods to control colour and flavour deterioration and second, as meat-curing accelerator, it speeds and controls the nitrite-curing reactions, and prolongs the colour and flavour shelf life of cured meats. Sodium Erythorbate has its economical advantage for food processors because it replaces Vitamin C, but still has the same properties


Glucono Delta Lactone (GDL)


Applications:

· Bakery Products

 

GDL is used effectively in various food processing applications in which a controlled reduction of th pH is required. GDL is a fine, white crystalline powder with a slightly sweet taste. In aqueous solution, GDL hydrolyses to gluconic acid and shows progressive reduction of the pH.

 


Freeze-Dry Products

FD products are manufactured by removing the moisture from the frozen product using a very low temperature and a vacuum. The end product weight is reduced by over 90%, while the volume stays the same. FD products are natural additive-free products, which remain their characteristic taste, flavour, colour, texture and nutritious values.
